Recipe of the week - Parmesan Chicken

I remember Mom making this a few times when I was a teenager.  A friend of hers, Nancy Smith, made this chicken dish for use once and Mom loved it and wanted the recipe.  When I ran across it a few years ago, I gave it a try and loved it all over again.  It's easy and tastes delicious.

Parmesan Chicken
6 chicken breasts, boneless and skinless
1 stick margarine, melted
3/4 cup Parmesan cheese
1 tsp garlic salt
1 1/2 cup bread crumbs

Combine margarine, cheese and garlic salt.  Dip chicken in cheese mixture then roll in bread crumbs.  Place in 9x13 baking dish.  Drizzle any leftover cheese mixture on top of chicken.  Bake one hour, uncovered, at 350.  Do not turn chicken over during cooking.

*I have found that using the really large, thick chicken breasts works best on this recipe.

Enjoy!
