Recipe of the week - Quick Quiche

I got this recipe from June a few weeks ago when I went to visit them for the first time since the pandemic started.  We were talking about food and Dad brought up this dish and said how much he enjoyed it.  June copied it for me and I tried it out the next day.  It's pretty easy and yummy!  Now, this is a crustless quiche but quite good!

Quick Quiche
Ingredients
1 1/2 cups milk
1/2 cup bisquick
4 Tbsps melted butter
3 beaten eggs
1 cup chopped ham
3/4 cup cheddar cheese

Mix all together in a bowl.  Pour into ungreased 9" or 10" pie plate.  Cook at 350 for 45 minutes.  Let cool 10 minutes before cutting.

The great thing about this is I usually have all of these ingredients at hand.  And if I don't have ham, I can add something else.  I think this would be good with mushrooms, onions or peppers.  Enjoy!

Recipe of the week - Beef and Broccoli

Lately, I have been finding thin sliced beef for good prices at the grocery store.  I have not had much experience with this cut of meat so I decided to look for a beef and broccoli recipe.  I found this one on a blog called justataste.com.  It's not only delicious, it's easy and doesn't take a long time.  We've had it several times since I first made it and it's very filling!

Beef and Broccoli  
    3 Tbsp cornstarch, divided
    1 lb flank steak, cut into thin 1" pieces
    1/2 cup soy sauce
    3 Tbsp packed light brown sugar
    1 Tbsp minced garlic
    2 tsp grated fresh ginger
    2 Tbsp vegetable oil, divided
    4 cups small broccoli florets
    1/2 cup sliced onion

Whisk together 2 Tbsp cornstarch with 3 Tbsp water. Add beef to the mixture and toss to coat.  In a separate bowl, whisk together remaining cornstarch with soy sauce, brown sugar, garlic and ginger.  Set the sauce aside.  Heat a nonstick saute' pan over medium heat.  Add 1 Tbsp oil.  Once heated, add beef and cook until the beef is almost cooked through.  Using a slotted spoon, transfer beef to a plate and set aside.  Add remaining oil to the pan and once heated, add broccoli and onion.  Cook until the broccoli is tender, about 4-5 minutes. Return beef to pan and add the sauce.  Bring the mixture to a boil and stir for 1 minute or until the sauce thickens.  Serve over rice or noodles.

Somewhere Over the Rainbow


I am posting this on what would be Mom's 76th birthday.  This song was a huge part of my childhood because of her, introducing the movie to me and playing this on the piano for me.  I just want something happy today to remember her by on her birthday. Happy Birthday, Mary B.!
