Here it is, the end of January, and this is my first blog of the new year. About time LOL Actually, I've been working on some things and that will come in later blogs. Anyway, I wanted to start the year off with a good, easy recipe. When we were home for Christmas, Michael's mom made this for lunch one day. We both enjoyed it and so I got the recipe from her. And it's pretty low carb. Sweet!!
White Castle Cheeseburger Pie
1 lb. ground beef
1 envelope onion soup mix
2 eggs
1/2 cup mayo
1/4 cup heavy cream
8 ounces shredded cheese
Salt and pepper
Brown the ground beef with half of the onion soup mix. Drain fat, then add salt and pepper to taste. Stir in the remaining soup mix and half the cheese. Put into a 9" pie plate. Top with the remaining cheese. Beat eggs and mix with mayo, cream and more s&p if wanted. Pour over beef mixture. Bake, uncovered, for 30-35 minutes at 350. Let stand for 10 minutes.
