Last summer, a friend of mine gave me some jalapenos from her garden. I had never cooked with them before, so it was an adventure for me. I found this recipe and have made it several times. I hope you enjoy it!
Jalapeno Cheddar Cornbread
8.5 oz box Jiffy Cornbread Mix
1 egg
1/3 cup milk
2 Tbsp diced jalapenos
1 cup shredded cheddar
1/8 tsp salt
Preheat oven to 375. Combine cornbread mix, egg and milk. Add remaining ingredients. Combine well. Mixture will be thick and lumpy. Pour into 8x8 pyrex dish. Bake for 20 minutes or until golden brown.
