Now, I will be the first to admit that I absolutely love a good, congealed salad. I grew up with them. Every family gathering there was a congealed salad of some kind. My great Aunt Sara brought one every time she came to a dinner at our house or Grandmother's. It was tradition and I just love them. I did not make them much over the past few decades because Michael does not like them so now, I am making up for lost time. I found this recipe in a cookbook that June gave me and wanted to give it a try, mainly because I had all of the ingredients on hand. I thought it turned out so good. I shared with several friends, and they loved it as well. It's different from other congealed salads that I have made before. Its texture is almost that of a relish than a congealed salad. Either way, it is wonderful and will be a part of my cooking canon going forward. I hope you enjoy it!
Cranberry Salad
1 lb cranberries (ground)
1 (No. 2) can of crushed pineapple
2 boxes red Jell-O*
2 cups sugar
1 cup chopped apples
1 orange, cut into small pieces**
Drain and heat liquid from pineapple, adding water to make 2 cups. Add sugar and Jell-O until everything is dissolved and mixed thoroughly. Add remaining ingredients. Pour into a Pyrex or mold and chill.
* I used cherry Jell-O
** I used a large can of mandarin oranges, drained
