Recipe of the week - summer cucumbers and tomatoes

This is so quick and easy and a delicious way to enjoy some summer vegetables!
3 cups of chopped tomatoes
3 cups chopped cucumbers
1/4 cup chopped parsley
2 Tbsp olive oil
2 tsp lemon juice
1 tsp coarse salt

Combine all ingredients.  Toss well and serve.

*Cucumbers can be seeded or not.  It makes for a prettier dish if they're seeded, which i didn't do this time LOL
